We make jam from the thick-skinned, juicy, ripe fruits of our many varieties of lemon trees such as sweet, fragrant, bergamot, lime, and Mediterranean everglooming varieties.
We boil the lemons whole in plenty of water, after grating the sour, part of the outer peel, drain the sour water, then cut them into thin slices with thin fruit, put them in sugar, and make jam enriched with fresh mint.
